This Apple Pie Baked Oatmeal recipe is THE BEST meal prep for the fall season! It's highly nutritious, with all the flavors of apple pie. (It tastes more like dessert!) Store in refrigerator, serve cold or warmed.

Instructions

  1. Preheat oven to 375 (F). Prep a casserole or glass baking dish by brushing with light tasting olive oil. (If you do not have a brush, use your fingers to spread a thin layer of oil over the entire baking area.)
  2. Chop apples into medium-sized pieces. Set aside.
  3. Add all dry ingredients (rolled oats, protein powder, baking powder, cinnamon, nutmeg, salt) to a mixing bowl, whisk or stir until well combined.
  4. Add wet ingredients (almond milk, eggs, maple syrup, vanilla extract) to dry ingredients, and stir until well combined.
  5. Add 3/4 of the chopped apples to the batter, and stir until evenly combined.
  6. Pour batter into prepared baking dish, and place remaining chopped apples evenly across the top of the batter. (If desired, you could also top with chopped nuts, like pecans or walnuts.)
  7. Place in oven, and bake for 35-45 minutes, depending on the size of your dish. Oatmeal is done baking when a toothpick comes out clean or dry.
  8. Enjoy! Store in refrigerator. Serve cold or warmed.

Notes
