The three bears would love this - not too sweet, not too sour... just right! This fresh treat makes a delicious morning kickstart with just enough healthy carbs, fiber, protein, and fat to keep you feeling energized and focused!

Instructions

  1. Preheat oven to 375 (F).
  2. Slice peaches and place in bottom of glass baking dish in one even layer.
  3. Add butter to a small saucepan and melt on low. Once melted, add honey and almond/vanilla extract, whisking until well combined.
  4. Meanwhile, in a large mixing bowl add oats, oat flour, and cinnamon. Whisk untl well combined.
  5. When butter mix is evenly combined and fully melted, add to oat mixture. Stir until well combined. The mix will be a little dry "crumbly."
  6. Add crumble to top of peaches. Make sure the crumble is evenly spread across the top of the peaches. Not all peaches will be covered, but most should be.
  7. Bake for 30-40 minutes. When done, crumble will be golden brown and peaches will be bubbling. Allow to cool before enjoying.

Notes

No oat flour? No problem! Add rolled oats to your blender or food processor. Using a milling blade (if possible), blend oats until a flour forms. And done! Easy peasy πŸ™‚
