This 3-ingredient healthy peanut butter protein cookie recipe is your new go-to! It's simple and quick to make, and everyone loves a sweet but healthy treat! Great fresh and frozen.

Instructions

  1. Preheat oven to 350 (F). Line a baking sheet with parchment paper.
  2. In a mixing bowl, break up your banana into smaller pieces. Then, using a fork, mash the banana into a creamy, paste-like consistency.
  3. Add your protein powder to the banana paste and mix until well combined (mixture will be "crumbly").
  4. Add your peanut butter to the batter, and mix until all ingredients are in the dough, not on the side of the bowl. This is the longest part of the process, so be patient here. You'll thank yourself later. (This step takes about 3 minutes using the fork to mix.)
  5. Scoop dough into 12 balls or piles, placing them on the parchment lined baking sheet equal distance apart.
  6. Use your hands to roll each ball smooth. Then, press hash marks into the top of each cookie dough ball. This flattens them and gives them that classic peanut butter cookie look! (Cookies may not remain perfectly round but shouldn't fall apart.)
  7. Bake for 10 minutes.
  8. Remove from oven, and move to a cooling rack to cool for about 5 minutes. If you don't have a cooling rack, you can place them spaced out on a large dinner plate in a cooler area on your countertop. Add 2-3 minutes of cool time for this method.

Notes

We like to make 2-3 batches of these at a time and store them in the freezer. It's a great way to have healthy, quick snacks on hand without stocking up on pre-packaged snacks.
