That’s where this Teriyaki Chicken & Rice Bowl recipe comes in! There’s really nothing to it… It’s rice, chicken breast cooked as cutlets (the easiest way), some frozen vegetables, and a (clean) teriyaki sauce. Boom! Lunch is served.
Now, if you’re one of our more experienced home chefs, you can jazz this meal up a thousand different ways! Add some fresh cabbage, stir fry veggies, use stir fry noodles, add an egg… Whatever Asian-inspired cuisine hacks or ingredients you have, go for it! Feel free to get creative with this one.
Serving: Add rice and veggies to a bowl, top with chicken. Add teriyaki sauce, and stir until evenly mixed. Enjoy! (You can also do this in a pot beforehand if desired.)

EASY Teriyaki Chicken & Rice Bowl
This simple Teriyaki Chicken Bowl is quick, easy, and beginner-friendly. We love this recipe for an easy and tasty meal prep that even works on-the-go. Customize this recipe with your preferred portions sizes, or follow the recipe below.

Ingredients
- 4 oz Chicken Breast, cleaned and cut into 1-2 inch pieces (cutlets)
- 2 Tbsp Olive Oil
- 1 c Brown Rice, cooked
- 1/2 c Frozen Peas & Carrots (and/or frozen vegetables of choice - see note)
- Salt & Pepper, to taste
- 1/2 oz Peanuts, shelled
- 2 Tbsp Teriyaki Sauce (Check labels for Nutrifitx Approved brands, or see links in ingredients/below recipe)
Instructions
- Heat oil in a skillet over medium heat. (Best to use a stainless skillet if available.) Meanwhile, season prepared chicken cutlets with salt and pepper.
- When oil is heated, begin adding seasoned cutlets to pan. Keep them separated as much as possible to encourage browning (and avoid steaming). Cook until water has evaporated, and chicken is browned. When done, move to a paper towel lined plate to dry/remove excess oil.
- While chicken is cooking, warm your rice and veggies. Add cooked rice and frozen veggies to a small pot. Heat on low until rice and veggies are heated through. If your mixture is sticking, turn down heat and add a splash of water or vegetable broth to stop sticking (repeat as necessary).
- Once everything is warm and cooked through, add chicken to pot. Top with Nutrifitx Approved teriyaki sauce (linked in ingredients and below recipe), and stir until evenly distributed. Transfer to bowl, top with peanuts (optional), and enjoy!
Notes
This recipe is completely customizable. Increase your veggies or protein, decrease your rice, add extra sauce, etc. Whatever fits your current approach (Intuitive Eating or our Goal-Specific Approach) and preferences. Remember, altering the recipe will change the nutrition facts.
This recipe also tastes great with frozen peas, broccoli, or stir fry mix.
