With a few simple tweaks, this recipe can also be made VEGAN and GLUTEN FREE! This is seriously one of the best breakfast recipes we’ve ever used. It makes a great healthy birthday or holiday breakfast, too πŸ˜‰ We love topping our stack with fresh fruit or berries, coconut cream, hemp seeds or pecans, and maple syrup.

Cinnamon Chia French Toast

Cinnamon Chia French Toast

This Cinnamon Chia French Toast is clean, healthy, and absolutely DELICIOUS! It's loaded in fiber, a good source of protein, and keeps you full for hours. You're going to LOVE this crowd-pleasing recipe! (Also great for meal prep.)

Ingredients

  • 1 Tbsp Chia Seeds, ground
  • 1 cup Unsweetened Almond Milk
  • 1/2 Tbsp Agave Nectar (can sub maple syrup or honey if desired)
  • 1/2 to 1 tsp Cinnamon (to taste preference)
  • 1/2 tsp Pure Vanilla Extract
  • 6 slices Ezekiel Bread (or other refrigerated sprouted grain bread of choice)
  • 2 Tbsp Butter (can sub a dairy-free butter or light tasting olive oil)
  • Toppings of choice: maple syrup, fruit and/or berries, almonds or pecans, hemp seeds, coconut cream, etc.

Instructions

  1. If you're not starting with ground chia seeds, you'll need to grind your chia seeds. To do this, place them in your blender for just 1-2 seconds. DO NOT leave them in long, as this is a very small amount of seeds.
  2. Add ground chia seeds, almond milk, agave, cinnamon, and vanilla to a blender, and blend all ingredients until well combined. Allow mixture to sit in refrigerator for about 30 minutes. In the meantime, make sure your bread is thawed.
  3. In a large skillet, melt 1 Tbsp of butter over medium heat. It should be the slightest bit sizzling when ready. Meanwhile, pour your chia batter into a shallow bowl large enough to fit a slice of bread.
  4. Once butter is heated, quickly dip each side of a slice of Ezekiel bread into the batter, then place in heated butter. Repeat until you have 3 slices of toast in your skillet at once. (If your skillet is too small to fit 3 slices of bread, you'll need to divide the butter up evenly depending on how many batches you'll need to make - in this recipe, a batch is 3 slices of toast.)
  5. Allow to cook on the first side without touching the toast. Leave for about 3 minutes or so until you can easily flip the toast without losing the batter. This recipe is best when cooked slowly. When ready, flip toast and repeat on opposite side.
  6. Remove from skillet, and repeat steps 4-5 until all bread is cooked. (For us, this was 2 batches of 3 slices of toast each.)
  7. Place a serving of toast on a plate, and top with your desired toppings. Try to avoid powdered sugar, chocolate spreads, traditional whipped cream, etc.

This sweet, all natural, 100% Nutrifitx Approved coconut cream is a great, healthy alternative to whipped cream. Use as a fruit dip or top your favorite desserts with this simple, crowd-pleasing recipe.

Ingredients

  • 1 can Coconut Cream
  • 1 1/2 Tbsp Raw Honey
  • 1 tsp Vanilla Extract

Instructions

  1. Open can of coconut cream, and drain water. Place cream in a small mixing bowl.
  2. Add honey and vanilla, and whisk until all ingredients are well combined. Beat with a mixer to achieve a thicker, fluffier whipped cream.
  3. Enjoy!
