Gluten Free & 100% Plant Based | These soft and chewy oatmeal cookies are the perfect healthy treat! With oats, flax seed, maple syrup, peanut butter, and a sweet treat of choice (we used chocolate chips), you'll be making these healthy cookies all season long!

Instructions

  1. In a large bowl, add oat flour, oats, flax seed, baking powder, and sea salt. Whisk (or stir) until well combined.
  2. Add butter, vanilla, maple syrup, and peanut butter to your dry mix. Stir until well combined. Make sure all ingredients are evenly distributed. This step may take around 3 minutes or so to get all ingredients mixed well.
  3. Once your dough is well combined, add your chocolate chips or dried fruit. Stir until your sweet treats are distributed evenly throughout the dough.
  4. Place dough in refrigerator for 30 minutes. Preheat oven to 350 (F). Prep a cookie sheet by lining it with parchment paper. (If you're running short on time, place your dough in the freezer for around 10-15 minutes. The refrigeration method works best, but the freezer works for a pinch!)
  5. When dough is chilled, remove from refrigerator, and place dough on the cookie sheet. Scoop your dough out of the bowl, and roll into balls. Place the cookie dough ball on the parchment paper (in its cooking place), and press the ball until it's about 1/2-3/4 of an inch thick. You should have about 18 cookies evenly spaced on the parchment paper lined cookie sheet.
  6. Place cookies in oven for 15-25 minutes. Check frequently, as these cookies can get crunchy quickly! All ovens are different, so start with 15 minutes, and check for softness every 3-5 minutes after.
  7. When cooked, remove from oven. Optional, place cookies on a cooling rack. Cool for 3-5 minutes before serving.

Notes

To make your own oat flour, you can add rolled oats to a blender or food processor with a milling blade. We use a NutriBullet with a milling blade or a food processor. Blend until oats are ground into a fine meal or flour - there should be no whole oats remaining.
