This Maple Balsamic Salmon Salad is gluten free, gut healthy, and oh so good for your body! Simple, basic ingredients come together to pack a bold, sweet flavor you can't get enough of! (Don't forget to make extra - you'll be craving this for lunch tomorrow, too!)

Ingredients

Maple Balsamic Glazed Salmon

  • 2 4oz Salmon Fillets (Wild Caught)
  • 1/2 Tbsp Olive Oil
  • Sea Salt or Pink Himalayan Salt, to taste
  • Pepper, to taste
  • 1/3 c Organic Balsamic Vinegar
  • 3 Tbsp Maple Syrup
  • 3 Large Organic Strawberries, sliced

Salad

  • 3-4 c Organic Mixed Spring Greens (or Organic Spinach)
  • 4 Large Organic Strawberries, Sliced
  • 1/2 Onion, Thinly Sliced

Instructions

  1. Preheat oven to 425 (F)
  2. Brush or rub a thin layer of olive oil over salmon fillets, then season with salt and pepper to taste. Bake for 15 minutes.
  3. Meanwhile, prepare your glaze. Add balsamic vinegar, maple syrup, and strawberries to a small saucepan. Heat over medium heat, stirring often to prevent burning and sticking. Reduce glaze (this just means to continue cooking until the water is cooks out) to desired thickness. (We prefer a fairly thick glaze.)
  4. When salmon fillets are cooked through, remove them from the oven and lightly cover or brush in a little of the glaze. (DO NOT use it all! It should take about 1-2 small spoonfulls of glaze per fillet.) Cook for about 5 minutes more.
  5. Repeat step 4 with a second layer of glaze. (DO NOT use all the glaze here - that is your salad dressing.)
  6. While glazed salmon is in the oven, prepare your salads.
  7. Drizzle salads with remaining glaze, and enjoy!
