Healthy Taco Soup
This healthier take on taco soup is going to be a new fall/winter favorite! This is the BEST healthy crowd pleasing soup recipe.
Ingredients
- 1 lb Lean Ground Turkey
- 2 Tbsp Olive Oil
- 1 Onion, diced
- 2 Organic Jalapenos, seeded and diced
- 1 cup Organic Corn (fresh or frozen)
- 1 Tbsp Organic Tomato Paste
- 1 Tbsp Organic Chili Powder (we used 2 tsp regular chili powder and 1 tsp chipotle chili powder to spice it up!)
- 1 Tbsp Ground Cumin
- 1/2 Tbsp Onion Powder
- 1/2 Tbsp Garlic Powder
- 1-2 Tbsp Garlic, minced
- 15 oz Black Beans (canned), drained and rinsed
- 15 oz Chili Beans (canned), with juice
- 4 cups Organic Vegetable Broth (or Water)
- 1/4-1/2 cup Fresh Cilantro, finely chopped
- Salt and Pepper, to taste
Instructions
- Heat 1 Tbsp olive oil over medium heat. Once heated, add turkey meat. Stir and mince until small pieces are cooked through completely.
- Add 1 Tbsp olive oil to the cooked turkey meat, then add diced onions, diced jalapenos, and corn. Stir until onions are transparent and corn is sweetened.
- Add tomato paste, chili powder, cumin, onion powder, garlic powder, minced garlic, and salt (to taste). Stir until evenly combined.
- Add all beans and broth. Stir gently. Boil your soup, then quickly bring the pot to a simmer. Cook for 20-25 minutes on low/simmer. For a thicker soup, simmer longer.
- Add chopped cilantro, stir, and allow to simmer for an additional 5 minutes.
- Serve with desired toppings: fresh cilantro, organic corn chips, lime, avocdo, cheese, sour cream, or your favorite taco toppings.
