This healthier take on taco soup is going to be a new fall/winter favorite! This is the BEST healthy crowd pleasing soup recipe.

Ingredients

  • 1 lb Lean Ground Turkey
  • 2 Tbsp Olive Oil
  • 1 Onion, diced
  • 2 Organic Jalapenos, seeded and diced
  • 1 cup Organic Corn (fresh or frozen)
  • 1 Tbsp Organic Tomato Paste
  • 1 Tbsp Organic Chili Powder (we used 2 tsp regular chili powder and 1 tsp chipotle chili powder to spice it up!)
  • 1 Tbsp Ground Cumin
  • 1/2 Tbsp Onion Powder
  • 1/2 Tbsp Garlic Powder
  • 1-2 Tbsp Garlic, minced
  • 15 oz Black Beans (canned), drained and rinsed
  • 15 oz Chili Beans (canned), with juice
  • 4 cups Organic Vegetable Broth (or Water)
  • 1/4-1/2 cup Fresh Cilantro, finely chopped
  • Salt and Pepper, to taste

Instructions

  1. Heat 1 Tbsp olive oil over medium heat. Once heated, add turkey meat. Stir and mince until small pieces are cooked through completely.
  2. Add 1 Tbsp olive oil to the cooked turkey meat, then add diced onions, diced jalapenos, and corn. Stir until onions are transparent and corn is sweetened.
  3. Add tomato paste, chili powder, cumin, onion powder, garlic powder, minced garlic, and salt (to taste). Stir until evenly combined.
  4. Add all beans and broth. Stir gently. Boil your soup, then quickly bring the pot to a simmer. Cook for 20-25 minutes on low/simmer. For a thicker soup, simmer longer.
  5. Add chopped cilantro, stir, and allow to simmer for an additional 5 minutes.
  6. Serve with desired toppings: fresh cilantro, organic corn chips, lime, avocdo, cheese, sour cream, or your favorite taco toppings.
