Baked oatmeal feels like a cross between an energy bar and a breakfast cake. It’s soft and sweet, and tastes like a treat. Serving: Enjoy cold or reheated. To reheat, place in toaster oven for 10 minutes at 350 (F) (or equivalent for your machine of choice). Top with our Sweet Vanilla Coconut Cream and/or maple syrup (optional).

Gluten Free & 100% Plant Based | Baked oatmeal is the perfect meal prep breakfast. It has healthy carbs and fats, clean protein, fiber, and so many body-loving nutrients. It's a superfood punch to kick off your day. Store in refrigerator. Enjoy cold or reheat in 10 minutes, enjoy with our whipped coconut cream recipe and your favorite Fall beverage!

Instructions

  1. Preheat oven to 375 (F). Prep a large baking dish (we used glass) with light tasting olive oil. Brush or use hands to spread a thin layer across the bottom and sides of the entire dish.
  2. In a large mixing bowl, add all dry ingredients (oats, protein powder, balking powder, cinnamon, pumpkin pie spice, chia seeds, and salt) and mix until well combined.
  3. Add wet ingredients (pumpkin puree, maple syrup, vanilla, and 3 cups of almond milk) to dry ingredients, and mix until well combined. If your batter is too dry, add almond milk by the 1/4 cup. Consistency will be thick but can still be easily stirred. Batter should NOT be thin or "runny." If your protein powder has a big scoop or if you're using more protein powder, you may need more than 1 additional cup of almond milk.
  4. Pour batter into prepared baking dish. Place dish in oven, and bake for 35-45 minutes. Baked oats are ready when a toothpick inserted in center comes out clean (with no wet ingredients).
  5. Set aside to cool. Once cooled, cut into 6 pieces, and enjoy or store for future meals.

Notes

Store in refrigerator. Warm for 10 minutes or until heated through. Optional, top with our whipped coconut cream and/or maple syrup.
