Salmon & Egg Breakfast Recipe (The BEST way to use leftover salmon!)

Some call it leftovers, we call it meal prep. If you’re looking for a way to use up that leftover salmon, this Salmon & Egg Breakfast recipe is a scramble you’ll be returning to week after week.
Serving: Great with any leftover salmon, but we like this recipe best with leftover Maple Spice Salmon. Serve with toast or over our Healthy Breakfast Potatoes, and top with your choice of fresh grated Asiago or Parmesan cheese and sliced green onion or chives. (All serving suggestions optional, feel free to enjoy alone if you choose!)

Salmon & Egg Breakfast Recipe (Prep with Leftover Salmon)
Leftover Salmon Breakfast Scramble
Use your leftover salmon to make a superfood breakfast scramble! It's clean, healthy, metabolism boosting, and keeps you full for hours. This delicious dish is great with almost any flavor of salmon, but we love it with leftover Maple Spice Salmon. (No leftover salmon? Used canned salmon instead.) Serve alone or over our Healthy Breakfast Potatoes.

Ingredients
- 1 Tbsp Olive Oil
- 2-4 oz Cooked Salmon, we used leftovers (No leftover salmon? Use canned salmon, instead!)
- 1 Egg
- 2-3 Egg Whites (or 1/3 cup to 1/2 cup egg whites)
- Salt & Pepper, to taste
- 1/2 oz Asiago or Parmesan Cheese (Optional), Freshly grated from block
- Sliced Green Onions or Chives, to taste (optional)
Instructions
- In a skillet (we love this non-toxic non-stick skillet), heat oil over medium heat. Meanwhile, flake cooked salmon in a separate bowl, and lightly beat eggs/egg whites in another separate bowl.
- When heated, add salmon fakes to the oil. Allow to cook until slightly crispy around the edges (about 3-5 minutes).
- Once cooked to desired crispiness, slide all salmon to one side of the skillet. Pour eggs into opposite side of the skillet, and season with salt and pepper to taste. With a spatula, continue stirring and mixing the eggs as they cook. Once they are 80-90% cooked, begin mixing the eggs with the crispy salmon flakes.
- Once eggs are cooked through, remove skillet from heat and top with cheese (optional) and chives (also optional). Serve alone or over our Healthy Breakfast Potatoes.

Optional: Add diced onions, organic diced peppers, and minced spinach in with the salmon flakes at the beginning to boost flavor and nutritional value.
