Double Chocolate Protein Muffins
These protein muffins are GREAT for a morning treat with coffee or tea or even a preworkout or afternoon snack. These muffins are gluten free, naturally sweetened, and amazing for your body and your health and weight loss goals. Perfect for meal prep and on-the-go.
Ingredients
- 1 1/2 cups Chocolate Protein Powder (We like Vega Sport)
- 1/4 cup Tapioca Flour (We like Bob's Red Mill)
- 1/2 tsp Salt (Sea Salt or Pink Himalayan Salt)
- 1/4 cup Raw Honey (the darker, the better)
- 2 cups Unsweetened Oat Milk (or Unsweetened Plant Based Milk of Choice)
- 1/2 cup 75-80% Dark Chocolate Chips
- 3 Eggs
- 2 tsp Vanilla Extract
- 2 tsp Almond Extract
Instructions
- Preheat oven to 350 (F). Prep cupcake tin by lining with cupcake liners (optional) and brushing with light tasting olive oil.
- Mix all dry ingredients (except chocolate chips) with a whisk until well combined (protein powder, tapioca flour, salt).
- Add milk, honey, eggs, vanilla, and almond. Stir until well combined. There should be no lumps. Use a spoon first, then stir until smooth with whisk. (Can also use electric beaters if preferred.)
- Fold in (mix lightly with spoon) chocolate chips until evenly distributed.
- Separate batter evenly into preprared pans.
- Bake 15-20 minutes. If using convection, start with 12 minutes, adding 3-5 minutes after each check. Check brownies periodically by inserting a toothpick into the center of a couple of brownies. Brownies are cooked when toothpick comes out clean.
- Cool for 3-5 minutes in pan; then, remove brownies from pan and place on a plate or cooling racks. Enjoy when cooled!
