Is it bad to eat a muffin for breakfast?

Well, your traditional muffin isn’t really Nutrifitx Approved 80% of the time… And it’s normally not the best breakfast choice. Muffins are usually pretty nutrient poor and calorie dense, and they’re also extremely high in sugar. They are certainly delicious with your morning coffee or tea, but they aren’t the best for your body. Especially in the morning.

Refined flour is the base of a traditional muffin recipe. While all purpose, enriched, refined flour is a major factor in what makes muffins so tasty, it’s also a major factor in what makes them so bad for you. Flour is relatively low in key nutrients like high quality proteins, healthy fats, and even fiber. The refining process strips the wheat to nothing, so nutrients must be chemically added after processing. So, although flour is made from wheat, it’s nothing like the plant that grows from the ground. Most muffin recipes also contain CUPS of sugar. It’s not uncommon to see 1-2 (or more) cups of granulated sugar in a muffin recipe. The refining process also strips granulated sugar of any antioxidants and nutrients.

These refined flours and sugars have a negative impact on health and weight loss.

Both of these ingredients process as one thing: SUGAR. Sugar (without fiber, protein, and healthy fats) has a negative impact on blood sugar levels. It causes a spike in blood sugar which translates to a negative insulin response. Lots of blood sugar spikes makes you insulin insensitive, which makes it harder to maintain your metabolic health. Insulin insensitivity can also cause you to slow, stop, and sometimes even reverse your weight loss efforts. That means you’re consistently increasing your risk of weight gain and fat burning resistance… not good!

Our Double Chocolate Protein Muffins are a yummy, sweet treat that you can feel good about eating – and feel good after eating! We’ve replaced health harming ingredients in traditional muffins with health and weight loss supporting ingredients that nourish the body and mind. Let’s take a look:

  • We’ve replaced refined flours with high quality, plant based protein powder. Protein powder is a great replacement for refined wheat flour, because it has more protein and higher quality ingredients. We used chocolate Vega Sport protein which has ingredients like pumpkin seeds, sunflower seeds, tart cherry, turmeric, and even probiotics (and more). It has no artificial sweeteners, the chocolate flavor comes from real cacao, and there are no sugar alcohols. Adding protein to your baked goods is great for sustained energy, satiety, and balanced blood sugar levels.
  • We’ve replaced refined sugars with raw honey. Honey is a great alternative to sugar. It’s double the sweetness, so you can use less; and honey also has gut healthy properties. It’s a great sweetener for those looking to boost gut health. Plus, if you get local honey, you also get the added benefit of local allergen immunity boost. Choose the best honey: choose raw varieties and the darkest you can find. (We typically steer clear of organic labels on honey, as it’s nearly impossible to ensure bees only cultivate from organic plants.)
  • Dark chocolate chips (60-80% cacao) give these chocolate protein muffins a soft and fudgy center. Dark chocolate chips are a great and delicious way to boost your antioxidant intake. In small quantities, dark chocolate has anti-inflammatory properties, as well. Be sure to choose a chip with a high percentage of cacao. Not only as these (usually) a higher quality chocolate, but they also contain less sugar and dairy ingredients.

These protein muffins are GREAT for a morning treat with coffee or tea or even a preworkout or afternoon snack. These muffins are gluten free, naturally sweetened, and amazing for your body and your health and weight loss goals. Perfect for meal prep and on-the-go.

Ingredients

  • 1 1/2 cups Chocolate Protein Powder (We like Vega Sport)
  • 1/4 cup Tapioca Flour (We like Bob's Red Mill)
  • 1/2 tsp Salt (Sea Salt or Pink Himalayan Salt)
  • 1/4 cup Raw Honey (the darker, the better)
  • 2 cups Unsweetened Oat Milk (or Unsweetened Plant Based Milk of Choice)
  • 1/2 cup 75-80% Dark Chocolate Chips
  • 3 Eggs
  • 2 tsp Vanilla Extract
  • 2 tsp Almond Extract

Instructions

  1. Preheat oven to 350 (F). Prep cupcake tin by lining with cupcake liners (optional) and brushing with light tasting olive oil.
  2. Mix all dry ingredients (except chocolate chips) with a whisk until well combined (protein powder, tapioca flour, salt).
  3. Add milk, honey, eggs, vanilla, and almond. Stir until well combined. There should be no lumps. Use a spoon first, then stir until smooth with whisk. (Can also use electric beaters if preferred.)
  4. Fold in (mix lightly with spoon) chocolate chips until evenly distributed.
  5. Separate batter evenly into preprared pans.
  6. Bake 15-20 minutes. If using convection, start with 12 minutes, adding 3-5 minutes after each check. Check brownies periodically by inserting a toothpick into the center of a couple of brownies. Brownies are cooked when toothpick comes out clean.
  7. Cool for 3-5 minutes in pan; then, remove brownies from pan and place on a plate or cooling racks. Enjoy when cooled!

  • 2 Tbsp Butter (Grass Fed is Best)
  • 1/2 Tbsp Chocolate Protein Powder (We like Vega)
  • 1 Tbsp Raw Honey

Instructions

  1. Combine all ingredients in saucepan.
  2. Heat over low-medium heat, whisking while ingredents melt togther.
  3. When smooth, remove from heat. Spoon over your favorite treats for a delicious, unrefined alternative topping! (If meal prepping glazed baked goods, allow to cool completely before packaging/storing.)
  4. Enjoy!
