We love breakfast food! It’s sweet, savory, and SO yummy! You can count us in for a breakfast or brunch date any day of the week. One of our (and most people’s) favorite breakfast is pancakes. It’s a meal we think we need to give up if we want to be healthy and lose weight. But, we have good news… You don’t! This healthy pancake recipe is ABSOLUTELY DELICIOUS! Gone are the days of making pancakes from eggs and bananas to keep you on track with your diet.

Why are pancakes bad for you?

Usually, pancakes are off limits when it comes to eating clean and healthy. This is because your traditional pancake recipe or pancake mix is made with refined flours, refined sugars, unhealthy oils, and loads more sugar in syrup. So, let’s start at the top:

Refined Flours

Pancakes are typically made with all purpose flour which is highly refined. Your body processes white flour as a sugar. Sugars spike your blood sugar, causing you to be insulin insensitive. It sounds like that would be good for you, but a healthy body is actually insulin sensitive. You need your body to be insulin sensitive so that it knows how to appropriate your glucose (the free sugar in your blood). Glucose is used to break down fats and proteins and aids in other metabolic processes. (Your metabolism is the way your body converts food into energy.) Being insulin insensitive is a precursor to insulin resistance and diabetes, which makes it very hard to lose weight and attain metabolic health.

Refined Sugars

Refined sugars are also found in most pancake recipes and mixes which means even more of a blood sugar spike. The greater your blood sugar spike, the more volatile the effect is on your body. Healthy blood sugar levels keep you from having intense cravings, prevent energy crashes, and support maintaining a healthy weight and healthy metabolic processes.

Toxic Ingredients (like High Fructose Corn Syrup or HFCS)

We then top pancakes with more sugar. We usually use pancake syrup, which is essential corn syrup with coloring and flavoring added to it. You legitimately WILL NOT miss traditional pancakes with this healthy pancake recipe – trust us. We’ve been eating these pancakes exclusively. We feed them to family and friends, and they’re always a hit. It’s one of those dishes that no one would believe is actually healthy!

Here’s what makes this healthy pancake recipe so amazing for you:

  • We eliminated refined flours and replaced them with rolled oats. That’s right, just plain old rolled oats. You can buy already ground oat flour, or you can blend up oats in a blender, with a milling blade, or in a food processor. It’s super quick and easy. Plus, rolled oats are a Nutrifitx Kitchen Staple, so they should already be in your pantry!
  • We use clean, anti-inflammatory olive oil. Olive oil is so, so good for your health! It’s our go-to oil choice. Use an extra light tasting variety for baking and sweets.
  • We replaced refined, granulated sugar with antioxidant rich honey. Honey is super good for your health. It’s high in antioxidants, has healing properties, and can even help decrease the effects of seasonal allergies. Choose the darkest variety you can find, and go local if possible.
  • We eliminated dairy and opted for creamy oat milk. Of course, you can use any milk you like – almond, cashew, or even dairy milk! However, dairy isn’t suitable for all bodily systems. Many people cannot tolerate dairy, dairy may irritate hormonal imbalance, and dairy can potentially cause other problems within the body. We usually pass on dairy (with the exception of a clean, grass fed, hormone free butter).

These pancakes are legit the BEST pancakes we have EVER had! Not only are they delicious and taste (and smell) bakery-fresh, but they are 100% Nutrifitx Approved, gluten free*, heart healthy, great for weight loss, and downright amazing for your body. (They're even kid tested and approved!) Top with pure maple syrup, pecans, blueberries, strawberries, or even a few dark chocolate chips (you can also add nuts and berries before cooking for a yummy treat!).

Ingredients

  • 2 c Oat Flour
  • 1/4 tsp Salt (Pink Himalayan or Sea Salt recommended)
  • 1 Tbsp Baking Powder
  • 1 tsp Cinnamon
  • 2 Eggs
  • 2 Tbsp Light Tasting Olive Oil
  • 1 Tbsp Raw Honey
  • 1 tsp Vanilla Extract
  • 1 c Oat Milk, Unsweetened (or Unsweetened Milk of Choice)

Instructions

  1. In a large mixing bowl, add oat flour, salt, baking powder, and cinnamon. Stir/whisk until well combined.
  2. Heat a tiny bit of light tasting olive oil in a Nutrifitx Approved nonstick pan (it doesn't take much) over medium-low heat. (As it heats, be sure to coat the entire botom of the pan with oil. Add more oil if needed, but be sure to keep oil to a minimum - no one likes greasy pancakes!)
  3. Meanwhile, add eggs, oil, honey, vanilla, and milk to dry ingredients. Stir/whisk until well combined. (There should be no lumps. With the exception of the ground oats, the batter should be smooth.)
  4. If adding other flavorings (fruit, nuts, dark chocolate, etc.) fold into batter now.
  5. Add batter to the pan with a 1/4 cup "scoop." Use a small eating spoon to scrape the edges of the scoop, and make sure to measure properly. Try not to overfill the measuring cup.
  6. Pancakes will rise/grow slightly. When you see a fair amount of bubbles on the top of the pancake, it's time to flip. As you cook the pancakes, you'll start to get the knack of knowing when they are ready.
  7. When all pancakes have been removed from pan, add another TINY bit of light tasting olive oil to the pan, and coat the pan again. Repeat this step, cooking pancakes 1/4 cup at a time, until all pancakes are complete. This recipe usually makes about 9 1/2 to 10 pancakes in total.
  8. Serve topped with pure maple syrup and you favorite toppings. Enjoy!

Notes

Make your own oat flour by blending oats (use a milling blade if possible). If you're making your own oat flour, be sure to measure the oats after they've been milled.

*Gluten free: Use gluten free certified oats if Celiac or gluten sensitive. Oats are naturally gluten free but often processed in facilities or on equipment that also process wheat.
