Healthy Vegetarian Breakfast Sandwich
Nutrifitx Breakfast Sausage
This healthy, homemade breakfast turkey sausge is delicious, nutritious, and super easy to make and meal prep! We like to cook half crumbled and half in patties for quick and easy breakfast options throughout the week.
Ingredients
- 16 oz Lean Ground Turkey
- 1 tsp Pink Himalayan Salt or Sea Salt
- 1 tsp Black Pepper (freshly ground is best)
- 1 Tbsp Garlic Powder
- 1 Tbsp Onion Powder
- 1 Tbsp Organic Smoked Paprika
- 1/2 tsp Organic Cayenne Pepper
- 1 tsp Organic Red Pepper Flakes
- 1/4 tsp Ground Nutmeg
- 1/2 Tbsp Dried Thyme Leaves
- Olive Oil, as needed
Instructions
- In a large mixing bowl, add ground turkey then all herbs and spices. Using the back side of a fork, mash/mix all the herbs and spices into the meat. Make sure the colors are evenly distributed throughout the meat. This will take about 3-5 minutes or so, and you will end up with a well seasoned ball of ground turkey.
- Add about 1 Tbsp olive oil to a large skillet, and heat over medium-low heat. Meanwhile, start separating your ground turkey and/or forming patties. See notes for details.
- Once oil is heated, start adding your sausge to the oil to cook. If making patties, allow each side to cook until browned. If making crumbles, break apart the ground turkey as you cook until all meat is cooked through and brownd. If making both, we recommend cooking patties first, then crumbles (or splitting a large skillet to cook both at the same time). Add SMALL amounts of olive oil as needed to keep the turkey from sticking to the pan.
- Once cooked, place your sausage on a paper towel lined plate to soak up the excess oil. If your meat is still visibly oily, take more paper towels and lightly dab the sausage. Unbattered meat doesn't usually soak up much oil, so the only oil you have to worry about consuming is sitting on top of the meat. While olive oil has numerous benefits for your heatlh, you must still eat it in moderation. We estimate that there should be no more than 1/4 tsp of oil left on each serving of sausage.

Making Turkey Sausage Patties: If you are using the Nutrifitx Goal-Specific Approach in the Nutrifitx System, you want accurate nutrition facts, or you want to make evenly portioned patties, you may find this helpful.
We like to make 2 ounce patties. Here is how we do it:
- Using a kitchen scale, weigh your raw meat after seasoning.
- Divide your raw seasoned weight by the original weight (Seasoned meat divided by 16 = x)
- "X" is the weight of 1 ounce of breakfast sausage. Multiply "x" by 2 for a 2-ounce sausage patty (or any size you want to make your patties).
- Weigh each patty in raw weight before forming or cooking. We usually make small piles of meat on a plate to make sure each patty is evenly sized.
- Once all patties are evenly divided, you can form the patties with your hands, and place them into the skillet to cook. The cooked weight won't matter, as the nutrition is calculated in raw weight.
