Slow Cooker Curry Chicken

Ingredients
- 1 lb. Chicken Breast (boneless, skinless)
- 1 (13.5 oz) can Coconut Milk
- 1 Tbsp Curry Powder
- 1/2 Tbsp Liquid Aminos (or coconut aminos, soy sauce, tamari, etc.)
- 1 Tbsp Lime Juice (about 1/2 lime)
- 1/2 Tbsp Agave Nectar (or Honey)
- 1 Onion, diced
- 1 Jalapeno, seeded and diced
- 4 cloves Garlic, minced
- 1 Tbsp Fresh Ginger, grated
- 1/4 c Fresh Cilantro, chopped
- 1/3 c Fresh Basil, chopped (or 1 Tbsp dried basil)
Instructions
- Add chicken to the bottom of a slow cooker, and top will all remaining ingredients except cilantro and basil.
- Cook on low for 8 hours or high for 3 hours. Chicken will be white and tender when cooked.
- Shred your chicken using shredding tools or two forks. Once shredded, add remaining herbs (cilantro and basil) to the mix. Stir to combine well.
- Serve over brown rice. Optional: Traditionally, many curry dishes are also served with naan (a type of flat bread).
Notes
It is perfectly fine to enjoy both rice and naan with this meal, just check to ensure all ingredients are Nutrifitx Approved and that you are timing this meal correctly. Adding both rice and a flatbread will drastically ingrease the GI (glycemic index) of this meal, especially if either or both are white/refined bread products. If you'd like to enjoy this meal for dinner without rice, opt for quinoa instead.
